Winemaker's Notes

Proverbi 31

Vermentino

"Proverbi 31 is produced using 100% Vermentino grapes.  The grapes are harvested in the first few days of September and subsequently processed with a soft pressing, the must obtained during this process is then fermented at a low temperature of approximately 59 degrees Fahrenheit.  After fermentation, the wine is kept on its fine lees for several weeks, which are put back into suspension through bâttonge. Once this short maturation period has passed, the wine is then bottled.

 

Proverbi 31 has a bright straw-yellow hue with hints of vibrant green and a rich olfactory profile of white peach, citrus fruits, aromatic herbs and an elegant minerality, which promotes freshness and lingering sapidity on the palate."

The biblical verse of Proverbs 31:16  inspired our name for this Vermentino. It says, “She considers a field and buys it; out of her earnings she plants a vineyard.” Perfect as our owner is a woman who used her profits to purchase and create Villa Splendida!

Sangiovese

Rosso I.G.T Toscano 100% Sangiovese. Sangiovese is an ancient Roman variety; the name is derived from the Latin "Sanguis Jovis" meaning "Blood of Jupiter”.

The grapes are harvested in September from a 30-year-old vineyard and are selected in the vineyard and processed in the cellar.  The primary fermentation on skins takes place in cement tanks at a controlled temperature for around two weeks. After pressing, the resulting wine is returned to cement tanks for a period of maturation that preserves the maximum varietal characteristics of the wine.  Once maturation is complete, the wine is carefully finished and bottled.

 

The wine has a brilliant ruby ​​red, intense bouquet, with floral aromas of purple, rose, red fruits. On the palate, broad, enveloping, with pleasant and structured tannins, good persistence.

Rosso I.G.T Toscano 80% Sangiovese 20% Cabernet Sauvignon. Sangiovese is an ancient Roman variety; the name is derived from the Latin "Sanguis Jovis" meaning "Blood of Jupiter. Both Sangiovese and Cabinet Sauvignon are harvested in September from 30-year-old vineyards.
The selected grapes from the vineyard are then fermented in cement tanks, remaining on skins for two weeks. The wine is then aged in French barriques for 12 months before bottling.

The wine is an intense ruby ​​red with an exuberant nose. Hints of ripe red cherries and red currants, intertwined with sweet spices. The balanced tannins build delicately on the palate, leading into a soft and elegant finish with excellent persistence.
